Repainting the XT engine

The flaking engine paint and corroding engine is a constant disappointment every time I look at my bike so, this winter I am going to tackle it. I have seen several posts on the what paint to use and will be using an etch primer and lacquer and either a yamaha out board paint which is sometimes available on e bay or look for the closest match of wheel paint or car paint.

Can anyone give me some advice on how far you need to go. Obviously engine out. I don't want to split the engine but may take the side casings off, but what else and what are others' experiences. How do you clean the corrosion off?
