3x bog standard 240mm Buzzetti levers is all I ever carry, although as has been mentioned, two is often all that is necessary. For rim protectors, I use cut up bits of old milk carton (have bought proper ones in the past, but kept leaving them behind and losing them!)
I'd also agree with Phil that the tyres on the Z are no harder to change than on any other similar bike. Yes, the rear rim is a tubeless type rim, with an inner lip to overcome, but practice and finding the "knack" is all that's needed. The brand of tyre makes a big difference though (depending on how stiff the carcass is.) TKCs for example are soft and very easy to change, but more road-bias tyres (particularly radial rears) tend to be more stubborn when it comes to breaking the bead.
