These are vegetable-based (derived from ethanol or phenol) compounds giving improved lubricating properties, better anti-shear qualities, a greater film strength, plus a much greater resistance to high temperatures (5100 has a slightly higher viscosity at temperatures over 100C).

In a nut shell - Motul 5100 is a slightly higher spec oil.
