You're not alone - I've also got mine set a 6 and average 57/58 to the gallon, dropping to 55 if I ride hard and nudging 60 if I'm bimbling around. In hot weather (above 20C) I'll go down to 5 o'clock and below 10C I run it at 7 o'clock as the effects of the series wired variable resistor on the air temperature sensor readings aren't linear.
Interestingly, before the fuel mod/DNA filter (in stock trim) I averaged exactly the same! However, that isn't exactly conclusive as the motor has loosened up somewhat since modifying the filtering and fuelling.
Don't bother much with the fuel gauge these days - I just fill up around 200 miles on the trip regardless. Now I come to think of it, I spent the first 20 years of motorcycling on bikes without fuel gauges and I never ran out once!
