As Uber says, just taking one caliper and disc off is going to make negligible difference weight wise, and simply by the laws of physics, the braking is now going to be poorer than it was with both of them...
However, if you were doing it as part of an upgrade - that is forks, triple clamps, front wheel etc, then sure, go ahead... although having run a 270mm single disc, Brembo master cylinder and Talon front wheel in WP forks, I wouldn't say you actually save much (any?) weight as such, you just get significantly better suspension performance/travel for your [considerable] amount of money...
I would also consider going for a 300mm single disc (I think they are 298mm actually, the same as fitted to KTM 690RRs) - the 270mm is fine and plenty powerful enough, only the lever pressure is very soft and lacking in bite - good for control off-road, but can give you a 'moment' if you are used to road-bike style brakes, and need to grab a handful in an emergency situation...
