Yes, it's normal, particularly on early models with the wasted spark ignition mapping. There will be slightly more residual fuel in the exhaust system on a suddenly closed throttle with the mods fitted. Nothing to worry about, but if you don't like it, you can always block the AIS pipe and the "popping" will reduce considerably. It cannot be completely eliminated on <2006 bikes though.
5 o'clock sounds OK for your setup, but there wouldn't be any harm trying 4, especially as the weather starts to warm up a bit. The warmer the ambient temperature the greater the richening effect is for a given setting. The reverse is the case with cold weather. Anywhere between 4 and 6 will be fine. Err on 4 if ambient is above 20C and below 10C, you might find 6 works best. Have a play and see what you think...
