This makes it live when ignition on. Which means you need to cover up the connections when no sat nav but rain.

As above - use the spare connector under the clocks. It is on the side light circuit which is protected by a 10A fuse, which is a higher rating than your satnav will need for protection against shorts. Make sure you run a separate in-line fuse of a rating fractionally above the peak current draw of your devise to protect it effectively (I use 3A) and be wary that, although live with the ignition on, it is also live when the key removed in the P position (parking lights).

Or do you just buy a pair and cut the existing connector off?

I bought a pair and disposed of the old. Cheap and quick to do but make sure you secure it with a cable tie or tape. As about a month or two after fitting mine I was riding along and getting bugged by a rattle at a certain rev range. I knew it was a new noise so hunted forthe source. I took me a good couple of hours to locate the offending part and it was my new conector rattling against the back of the hard plastic cover. However if you dont mind rattles, dont worry.
