FWIW, I fitted Renthal 613s with the original throttle cables and without cutting anything off the bar ends. It was just about OK on full right lock.

(Of course I then changed forks, yokes, and put 35mm bar risers on as well, and had to have some new throttle cables made up at +120mm. Amazingly though the original clutch cable is still fine!)

If you're planning on doing a lot of trail-riding, be aware that if you lower the brake pedal to suit sitting down, you won't actually be able to push it down far enough when you're stood up. I just put up with mine being a bit high when I'm sat.

About throttle cable length, I've noticed my throttle doesn't close by itself if I let go after opening it with the bars turned all the way to the right. Is it a tricky business getting a hold of a longer throttle cable and fitting it?

I wandered that when people say they have added bar risers....i take it cables/brake lines are o.k with risers?

Cant comment on the need for Renthals but would say fit the risers first and then make a decision on bars - I've fitted 25mm risers to standard bars with no problems with cables and I believe from what others have said 30mm is not a problem either.
